Hummus My Way–VG GF Super Creamy

Yet another hummus recipe?! My sons love this super summer recipe as it is quick and is a little different–there is no olive oil unless a drizzle on top is desired. We usually do not add any as it takes over the flavor of the tahini–pure sesame paste. There is no yogurt, no mayonnaise either. And to get a light and refreshing creaminess, here are three secrets: the first is rub the boiled chickpeas lightly with your fingers to remove the skin. Get as much out as you can without getting carried away. I will tell you how to do this. The second secret is to use some of the cooking liquid (also called aquafaba) from the chick peas, instead of water, when blending or processing. Third secret: blend or process it really, really well, like whipping it.

As my sons use this recipe a lot, the easiest is to get good canned chickpeas that are moist on the inside, not dry and mealy. Drain the chickpeas, saving the liquid. Then put the chickpeas in a large bowl and cover well with cold tap water. Now gently rub and loosen the skins. Drain the water along with the skins. Rinse a couple of times. Cover the chickpeas again, rub again, drain and rinse a couple of times. Some skin will remain, unless you want to keep doing this.

Then just blend all the ingredients: chickpeas, tahini, lemon juice, salt. Eat right away or chill and enjoy over the next few days. It is that easy and quick and tastes far better than store-bought hummus. Perfect summer food.

No need to sweat in the kitchen, no need to turn on the stove or the oven, and it all comes together in a blender in a few minutes. Ours stays fresh in the fridge for a week.

Ingredients

2 15 ounce cans of chickpea
1/3 cup of tahini (just sesame paste)
1/4 teaspoon of kosher salt
1/4 cup of lemon juice
3/4 cup of chickpea liquid (also called aquafaba), use more if needed to get the blender moving

Optional olive oil and paprika drizzle with a few whole chickpeas–I did it for the photo but do not normally do this.

Steps

  1. Blend every together on medium speed or use the food processor. Blend for 20 seconds, mix and scrape, adding more liquid if needed. Repeat 5 to 7 times till it looks well whipped.
